Potato Chip Cookies

Simple and easy recipe with a different flare for flavor of the traditional cookie. If you close your eyes when you eat them, there are no carbs or calories; just sweet memories of the days when Mom baked these for us.

Ingredients

  • 1 cup softened butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 1/2 cup flour
  • 2 tsp baking soda
  • 2 cups crushed plain thin or ridged potato chips
  • 1 package (16 oz) butterscotch morsels
  • 1 tsp pure vanilla

Directions

Step 1

Cream butter and both sugars together; blend in the eggs and vanilla, mix well.

Step 2

Combine flour and baking soda, add gradually to the mixture stirring after each addition.

Step 3

Add crushed potato chips and butterscotch morsels, mixing well after each addition.

Step 4

Drop by the teaspoon on a baking sheet for 8 to 10 minutes at 325 degrees.

Step 5


Authors note: I use parchment paper to line my pans but not necessary. Cook these for your brownie troop and ask that they guess the magic ingredient of the potato chip.
