Historical Context
Ice cream floats became popular in American soda fountains in the late 1800s, and pop rouge (strawberry soda) was particularly beloved in South Louisiana. The term ‘pop rouge’ comes from the Cajun French for ‘red soda,’ and these floats were a special treat for generations of Louisiana children.
