Pineapple Topped Cake
This cake is so very simple to make with pineapple cake mix and crushed pineapple…you’d think that it had taken all day to cook. Highly rated by Pop Pop - “Best cake he ever ate”. This would be a great cake to bake for a bingo or other fund-raiser.

Ingredients

24 servings
  • 1 box Pineapple Flavored Cake Mix
  • 1 can large crushed pineapple drained
  • 3/4 cup white granulated sugar
  • 2 tsp cornstarch
  • 3 tbsp butter

Step-by-Step Instructions

  1. Preheat oven according to cake mix box directions. Prepare as a sheet cake in a 9x13 pan the pineapple cake mix per the box directions. Bake until fully cooked, about 30-35 minutes.
  2. While cake is baking, combine the drained crushed pineapple, sugar, and cornstarch in a microwavable bowl. Microwave for 12 minutes, stirring halfway through. Remove and immediately add 3 tablespoons butter, stirring until melted.
  3. Spread the hot pineapple topping over the fully baked cake while both are still warm. Allow to cool before serving.

Common Problems and Solutions

Q: Why is my topping runny?

A: Make sure to microwave the full 12 minutes and stir halfway through - the cornstarch needs time to thicken properly. If it's still too thin, microwave in 1-minute increments until thickened.

Q: Should I spread the topping on a hot or cool cake?

A: Spread the hot topping on the warm cake - both should still be warm. This helps the topping soak in slightly and creates a better texture.

Tips and Techniques

For the best flavor, use a good quality pineapple cake mix and drain the crushed pineapple thoroughly - excess liquid will make the topping too thin. The topping can be made while the cake bakes to save time.
