Low Carb Taco Quiche
For us Cajuns who have to watch our waistline. Very easy, very low carb and very tasty - this crustless taco quiche has just four grams of carbs per wedge. Ground beef seasoned with taco spices, eggs, cheese, and salsa bake into a satisfying main dish that’s perfect for breakfast, lunch, or dinner.

Ingredients

  • 1 pound ground beef
  • 1 package taco seasoning
  • 3 beaten eggs
  • 1/2 cup cheese of your choice
  • 2 tbsp salsa
  • 1 cup chopped onions
  • sliced jalapeño (optional)
  • dollop of sour cream

Step-by-Step Instructions

  1. Preheat oven to 350 degrees.
  2. Spray a 9 inch pie pan with PAM. Brown and drain grease from hamburger meat. Add taco seasoning to meat, mix well and put into pie pan. Beat eggs adding the salsa and cheese and pour over hamburger mixture. Add onions and pepper.
  3. Bake 20 to 30 minutes until the egg is set. Slice like a pizza. A dollop of sour cream on top really adds to the taste.

Q: Why is my quiche watery?

A: Make sure to drain the ground beef thoroughly after browning. Excess grease or fat will make the eggs runny and prevent proper setting.

Q: How do I know when it's done?

A: The center should be set and not jiggly when you gently shake the pan. A knife inserted in the center should come out clean, around 20-25 minutes at 350 degrees.

Tips and Techniques

For extra flavor, sauté the chopped onions with the ground beef before adding the taco seasoning. This brings out their sweetness and ensures they’re fully cooked. You can also sprinkle a little extra cheese on top during the last 5 minutes of baking for a golden, melted finish.
