Lazy Night Supper
Ingredients
- 1 1/2 lbs ground beef
- 1 medium onion, chopped
- 1 (15 oz) can lima beans
- 1/2 cup washed rice
- 1/2 cup water
- Salt, black pepper, red pepper to taste
Step-by-Step Instructions
- In a medium to large skillet, brown the ground meat over medium-high heat and remove any fat.
- Add the chopped onions and sauté with the meat until softened, about 5 minutes.
- Add the can of lima beans (with liquid), rice and water. Season with salt, black pepper and red pepper to taste. Reduce heat to medium-low, cover, and cook until rice is done, stirring every 5 minutes (about 20-25 minutes). Add more water if it’s too dry.
Common Problems and Solutions
Q: Why is my rice still crunchy after 20 minutes?
A: The skillet may be too dry or the heat too high. Add 1/4 cup more water at a time and reduce heat to low. Cover the skillet between stirring to trap steam and help the rice cook through.
Q: Can I use dried lima beans instead of canned?
A: You'll need to cook dried lima beans separately first until tender, then add them to the skillet. Canned beans are the shortcut that makes this a truly lazy-night meal.
Tips and Techniques
Don’t drain the canned lima beans—the liquid helps cook the rice and adds flavor. If you like a saucier consistency, start with 3/4 cup water instead of 1/2 cup.
