Judy's Apple Cake
This apple cake with cinnamon spice is delicious and really quick—just mix cake mix with apple pie filling, eggs, and warm spices, then top with crumb topping or powdered sugar glaze. A perfect shortcut dessert with a choice of three frostings!

  • 1 (21 oz) can apple pie filling
  • 3 eggs
  • 1 cup water
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg (optional)

  • ½ cup brown sugar
  • 4 tablespoons softened butter

  • 1 cup powdered sugar

Step-by-Step Instructions

  1. Preheat oven according to cake mix box directions (usually 350°F). Lightly grease and flour a 9x13 pan.
  2. In a medium bowl, mix the apple pie filling and eggs together. Add the cake mix, cinnamon, nutmeg (if using), and water to the mixture and stir to combine.
  3. Pour batter into the prepared 9x13 pan.
  4. For the crumb topping, mix butter with flour, cinnamon and brown sugar until crumbs form. Sprinkle crumbs evenly over top of cake batter.
  5. Bake about 10 minutes longer than the time suggested on the cake mix box (typically 35-40 minutes total), until a toothpick inserted in the center comes out clean.
  6. For the glaze: combine the powdered sugar, the melted butter and the vanilla. Add the milk last, using only as much as to turn the mixture into a thick syrup. Glaze the cake while still warm.
  7. Or simply dust with powdered sugar and serve.

Tips and Techniques

The nutmeg is optional but adds wonderful warmth to complement the cinnamon. If you prefer a less sweet cake, skip the glaze and just dust with powdered sugar.
