Italian Potatoes

Ingredients
- 6 or 8 potatoes, thinly sliced
- 6 tbsp melted butter or margarine
- 1 tsp Italian seasoning
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
- 1/2 tsp salt
- Dash of cayenne pepper
Step-by-Step Instructions
- Arrange potatoes in round microwave dish or 3 quart Pyrex dish. Mix together the butter, Italian seasoning, garlic powder, peppers and salt. Pour over potatoes.
- Cover with lid. Microwave on high for 18 minutes or until tender, stirring occasionally.
Common Problems and Solutions
Q: Why are my potatoes cooking unevenly?
A: Make sure to slice the potatoes uniformly thin (about 1/8 inch) so they cook at the same rate. Stir them occasionally during cooking to ensure even coverage of the butter mixture.
Q: Can I make this without a microwave?
A: Yes, arrange the potatoes in a covered baking dish and bake at 375°F for 35-40 minutes, stirring once halfway through, until potatoes are tender.
Tips and Techniques
For best results, use a mandoline or the slicing blade of a food processor to get uniformly thin potato slices. Russet or Yukon Gold potatoes work especially well for this dish.
