A great shortbread cookie to enjoy, loaded with butter, brown sugar, and chocolate chips. Good for tea parties and a great treat to serve when sipping coffee with your friends.

Ingredients

  • 1 stick butter
  • 2 eggs
  • 2 tbsp or 3 vanilla
  • 1 cup light brown sugar
  • 1 yellow cake mix
  • 1 (12 oz) bag chocolate chips

Step-by-Step Instructions

  1. Preheat oven to 350 degrees F.
  2. Melt butter and let cool slightly.
  3. In a large mixing bowl, add the melted butter and beat in eggs, vanilla and brown sugar until well combined.
  4. Stir in yellow cake mix until incorporated, then fold in chocolate chips.
  5. Drop by tablespoon onto ungreased cookie sheet, spacing about 2 inches apart.
  6. Bake at 350 degrees for 15 to 20 minutes until edges are lightly golden.

Tips and Techniques

Don’t overbake these cookies - they’ll continue to firm up as they cool on the baking sheet. Remove them when the edges are just turning golden for the best texture.
