Hundley Cookies - A Shortbread Cookie
Ingredients
- 1 stick butter
- 2 eggs
- 2 tbsp or 3 vanilla
- 1 cup light brown sugar
- 1 yellow cake mix
- 1 (12 oz) bag chocolate chips
Step-by-Step Instructions
- Preheat oven to 350 degrees F.
- Melt butter and let cool slightly.
- In a large mixing bowl, add the melted butter and beat in eggs, vanilla and brown sugar until well combined.
- Stir in yellow cake mix until incorporated, then fold in chocolate chips.
- Drop by tablespoon onto ungreased cookie sheet, spacing about 2 inches apart.
- Bake at 350 degrees for 15 to 20 minutes until edges are lightly golden.
Tips and Techniques
Don’t overbake these cookies - they’ll continue to firm up as they cool on the baking sheet. Remove them when the edges are just turning golden for the best texture.
