Common Problems and Solutions
Q: Why is my dough too sticky to roll out?
A: If the dough is too sticky, chill it in the refrigerator for 15-20 minutes before rolling. Make sure you're using enough flour on your board and rolling pin. The dough should be firm but pliable.
Q: Can I make the dough ahead of time?
A: Yes! The dough can be made up to 2 days ahead and refrigerated, wrapped tightly in plastic wrap. Let it sit at room temperature for 10-15 minutes before rolling if it's too firm.
Tips and Techniques
For the most delicate texture, roll the dough as thin as possible without it tearing—about 1/8 inch thick. The egg white wash helps the cinnamon sugar stick and gives the cookies a beautiful sheen when baked.
