Honey Scotch Cookies
These crisp, delicate delights with butter, cinnamon, and vanilla are a wonderful treat for your loved ones. Similar to a tea cookie. Dale Begnaud in memory of his Mom’s great Cajun baking.

Ingredients

24 servings
  • 1/4 pound butter
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 1/4 cup flour
  • 1 egg, separated
  • 1/4 tsp vanilla
  • 1/4 cup sugar
  • 1 tsp cinnamon

Step-by-Step Instructions

  1. Preheat oven to 370 degrees.
  2. In a large bowl, cream the butter and 1/2 cup sugar. Add the egg yolk, flour, salt and vanilla and mix until well combined.
  3. Roll the dough thin (about 1/8 inch thick) on a floured board and cut in small circles with a cookie cutter or drinking glass.
  4. Beat the egg white until frothy and brush over top of the cookies.
  5. In a small bowl, mix 1/4 cup sugar and cinnamon together and sprinkle in the center of the cookies.
  6. Bake on an un-greased cookie sheet for 10 minutes until edges are lightly golden.
