French Pancakes (Crepes)



  • 1 cup sifted flour
  • 1 tbsp sugar
  • 3/4 tsp salt
  • 1/2 tsp baking powder (1/4 if double acting)
  • 2 eggs, beaten
  • 1 1/4 cups milk
  • 2 tbsp melted butter
  • 2 tsp lemon rind grated
  • Powdered sugar or syrup


Step 1

Mix all the ingredients in a medium bowl.

Step 2

In a small skillet, spray Pam. Over medium-high heat, pour a small amount of the batter in the skillet and tip the skillet so the batter coats the bottom layer of the skillet and a thin layer will form. Then flip the pancake over.

Step 3

Almost immediately, remove the pancake onto a plate (also remove the skillet from heat), butter the inside and roll the pancake up like a thin French pancake; ready to eat with powdered sugar or your favorite syrup.

Step 4

Adjust the temperature on your stovetop, as you are now ready to make more.

As a serving suggestion, you could also spread a very thin layer of your favorite jam or jelly before rolling up.
