Duane's Sweet & Spicy Shrimp Sauce
Ingredients
- 1 large onion, chopped
- 1 bell pepper, chopped
- 4 pounds cleaned shrimp or may substitute crawfish
- 2 (6 oz) cans tomato sauce
- 6 tbsp Tiger Sauce
- 4 tbsp Worcestershire Sauce
- 1 can Rotel tomatoes
- 4 tbsp Fruit Fresh
- 8 tbsp Tony's Brown Gravy Mix
Step-by-Step Instructions
- Sauté onion and bell pepper in a small amount of oil or butter until tender, about 5-7 minutes.
- Add tomato sauce, Tiger Sauce, Worcestershire Sauce, Rotel tomatoes, Fruit Fresh, and Tony’s Brown Gravy Mix. Cook for 30 minutes, stirring occasionally.
- Add shrimp and cook for another 20 minutes or until shrimp are pink and cooked through. You may need to add water if the sauce becomes too thick.
Common Problems and Solutions
Q: Why is my sauce too thick?
A: The gravy mix and tomato sauce can thicken significantly as they cook. Add water a little at a time (1/4 cup increments) until you reach your desired consistency. It should coat the back of a spoon but still be pourable.
Q: Can I cook the shrimp longer than 20 minutes?
A: Be careful not to overcook the shrimp or they'll become rubbery. They're done when pink and curled. If you're using large shrimp, 20 minutes is plenty; smaller shrimp might only need 10-15 minutes.
Tips and Techniques
Don’t skip the Fruit Fresh (ascorbic acid/citric acid powder)—it brightens the tomato flavors and keeps the shrimp from discoloring. If you can’t find Fruit Fresh, substitute 2 tablespoons of fresh lemon juice.
