Crunchy Coleslaw Salad
We found a delicious way to make cabbage unhealthy! This crunchy coleslaw salad combines cabbage, green onions, toasted almonds, sunflower seeds, and crispy Ramen noodles with a sweet vinegar dressing.

Ingredients

8 servings
  • 1 pound coleslaw
  • 1 bunch green onions - scallions
  • 1 cup sliced toasted almonds
  • 1 cup sunflower seeds
  • 2 packages Ramen Noodles (leave out seasoning packet)
  • 3/4 cup oil
  • 1/2 cup sugar or sugar substitute
  • 1/3 cup vinegar

Step-by-Step Instructions

  1. In a cup, combine the oil, sugar and vinegar. In another bowl, combine the coleslaw, green onions, almonds, sunflower seeds and broken up Ramen noodles. Pour oil mixture over salad and combine thoroughly.
  2. Chill one hour or longer for better flavor.

Tips and Techniques

Toast the almonds yourself for fresher flavor, or save time with pre-toasted almonds. The salad actually gets better after sitting in the fridge for a few hours as the flavors meld and the noodles soften slightly while staying crunchy.
