Ingredients

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk at room temperature
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1/2 lb crab meat
  • 2 hard boiled eggs, chopped
  • 1 egg, beaten
  • Cracker crumbs
  • Oil for frying

Directions

Step 1

Melt butter in saucepan until bubbling, gradually add the flour stirring constantly with a whisk.

Step 2

Slowly add the milk to make a cream sauce.

Step 3

Add the seasonings and crab meat. Mix well. Add the chopped eggs.

Step 4

Put the mixture in the refrigerator for about two hours; then shape into small balls. Roll in cracker crumbs and deep-fry in oil until golden brown. Serves two.
