I found this recipe on the net, but I tweaked it to fit my family’s likes. This easy vegetable casserole combines broccoli, corn, and buttery Chicken in a Biskit crackers. Great side dish with baked chicken.

Ingredients

6 servings
  • 1 box Chicken in a Biskit crackers, crushed
  • 1/2 cup margarine, melted
  • 1 package frozen broccoli, thawed and drained
  • 1 can whole kernel corn, drained
  • 1 can cream style corn

Step-by-Step Instructions

  1. Preheat oven to 350°F.
  2. Combine cracker crumbs and melted margarine; reserve half of this mixture for topping.
  3. Combine thawed broccoli, whole kernel corn, cream style corn, and remaining cracker crumb mixture.
  4. Transfer to a greased two quart baking dish.
  5. Sprinkle with reserved cracker crumbs.
  6. Bake uncovered for 25-30 minutes or until lightly browned on top.

Tips and Techniques

You can substitute butter for margarine for richer flavor. If you prefer more texture, don’t thaw the broccoli completely - slightly frozen pieces will hold their shape better during baking.
