Chocolate Covered Pecans
Ingredients

- 1/2 cup semi-sweet chocolate chips
- 3 tbsp heavy cream
- 1/4 tsp vanilla
- 2 cups pecan halves
Step-by-Step Instructions
- Roast pecans for two minutes in a microwave; stirring once during the process. Set aside.
- Combine the chocolate chips and cream in a double boiler. Stir until melted and smooth. Add vanilla and remove from heat.
- Stir pecan halves into the chocolate until completely coated.
- Remove a few pecans at a time with a slotted spoon. Separate pecan halves and place onto a waxed paper lined cookie sheet or parchment paper.
- Refrigerate for 10 minutes to set. Change the pace and add a dash of cinnamon.
Tips and Techniques
Use a double boiler to prevent the chocolate from scorching. If you don’t have one, place a heatproof bowl over a pot of simmering water, making sure the bottom of the bowl doesn’t touch the water.
