Ingredients

24 servings
  • 1 cup shortening
  • 1 3/4 cups sugar
  • 4 eggs
  • 1 tsp vanilla
  • 3 cups sifted flour
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup sugar
  • 1 (21 oz) can cherry pie filling

Step-by-Step Instructions

  1. Preheat oven to 350 degrees.
  2. Cream shortening, sugar, eggs, and vanilla together. Then add the flour, baking powder, and salt, mixing until combined.
  3. Place 3/4 of the mixture in a greased and floured 9x12 pan. Spread the can of pie filling on top of mixture. Take the remaining mixture and drop by spoonfuls over the fruit.
  4. Sprinkle with cinnamon and sugar. Bake at 350 degrees for 30 to 40 minutes, until golden brown.

Tips and Techniques

Try blueberry, apple, or peach pie filling for variety. The batter is thick, so don’t worry if it doesn’t completely cover the fruit—it spreads as it bakes.
