Cajun Brownies

Ingredients
- 1 box Yellow Cake Mix
- 1 stick melted butter
- 1 egg beaten
- Topping:
- 8 ounces cream cheese
- 1 box powdered sugar
- 2 eggs, beaten until fluffy
Step-by-Step Instructions
- Preheat oven to 350 degrees.
- In a glass bowl, mix the cake mix, melted butter, and 1 beaten egg. Press into an 8x8 greased pan.
- Mix the topping ingredients (cream cheese, powdered sugar and eggs). Pour into the pan, on top of earlier ingredients.
- Bake at 350 degrees for 30 minutes or until golden brown.
Common Problems and Solutions
Q: Why is my cream cheese topping not smooth?
A: Make sure the cream cheese is at room temperature before mixing. Cold cream cheese won't blend smoothly with the powdered sugar and eggs.
Q: Can I use a different pan size?
A: Yes, but adjust baking time. A 9x13 pan will make thinner bars and may only need 25 minutes. An 8x8 makes thicker, gooier bars.
Tips and Techniques
The bottom layer should be pressed firmly and evenly into the pan so it doesn’t mix with the topping. Don’t overbake—the center should still jiggle slightly when you remove it from the oven; it will set as it cools.
