Banana Nut Bread

This recipe is a popular “bread” in almost every culture, Cajun included. This recipe was provided right when we got our first request for it.

Ingredients

  • 1 cup sugar
  • 1/2 cup shortening
  • 2 eggs, beaten
  • 3 bananas, mashed
  • 2 cups flour
  • 1/4 tsp baking powder
  • 1/2 cup nuts (pecans or walnuts), chopped
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Directions

Step 1

Beat sugar, salt, vanilla, shortening, eggs and bananas in a bowl. Stir in the flour, baking powder, baking soda and chopped nuts.

Step 2

Spray a loaf pan with vegetable spray and add the batter.

Step 3

Bake at 350 degrees for 1 hour. Cool in the pan for 10 minutes and then move to a wire rack to complete cooling.
