Baked Fish w/Tomato Sauce

A popular fish dish, great for red fish or red snapper.

Ingredients

  • 4 bacon slices
  • 2 cups chopped onions
  • 2 (16 oz) cans whole tomatoes
  • 1 tbsp chopped parsley
  • 1/8 tsp thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 5 pounds red fish or red snapper
  • 1 can Rotel Brand tomatoes (optional)

Directions

Step 1

Preheat oven to 400 degrees. Fry bacon in a skillet. Remove the bacon and wilt the onions in the bacon fat. Add tomatoes (and Rotel) breaking and chopping them with a spoon.

Step 2

When the mixture is bubbling, add the parsley, thyme, bay leaves, chopped bacon, salt and pepper. Cook until most of the water has cooked out and the sauce is thick.

Step 3

Season the fish well inside and out and rub with butter. Cook for 15 minutes in the oven.

Step 4

Remove and spread the sauce over the fish. Finish baking at 350 degrees for 15 minutes more or until the fish flakes easily. Remove bay leaves and serve over steamed rice.
