Apple Flapjacks

- 2 tbsp margarine or butter
- 2 tbsp packed brown sugar
- 1/4 tsp ground cinnamon
- 1 medium apple, thinly sliced
- 2 eggs
- 1/2 cup all purpose flour
- 1/2 cup milk
- 1/4 tsp salt
Step-by-Step Instructions
- Preheat oven to 400 degrees.
- Melt margarine and pour in the bottom of a 9 inch pie plate in the oven. Sprinkle brown sugar and cinnamon over margarine. Put apple slices on top of the cinnamon sugar mixture.
- Beat eggs slightly in a medium bowl with a wire whisk. Mix in flour, milk, and salt, but do not overbeat.
- Pour batter over apple slices. Bake 30 to 35 minutes or until puffy and deep golden brown. Immediately loosen the edge of the pancake and turn upside down onto a serving plate.
Tips and Techniques
This upside-down method creates a beautiful caramelized topping. Make sure to flip the flapjack immediately after removing from the oven while the sugar is still warm and pliable. Use a thin, firm apple like Granny Smith or Honeycrisp that holds its shape during baking.
