Apple Flapjacks
This is a nice way to spruce up your breakfast. These caramelized apple flapjacks are baked upside-down with butter, brown sugar, and cinnamon, then flipped to reveal a beautiful golden topping. The tender apples and sweet glaze make them perfect for a weekend brunch.

Ingredients

  • 2 tbsp margarine or butter
  • 2 tbsp packed brown sugar
  • 1/4 tsp ground cinnamon
  • 1 medium apple, thinly sliced
  • 2 eggs
  • 1/2 cup all purpose flour
  • 1/2 cup milk
  • 1/4 tsp salt

Step-by-Step Instructions

  1. Preheat oven to 400 degrees.
  2. Melt margarine and pour in the bottom of a 9 inch pie plate in the oven. Sprinkle brown sugar and cinnamon over margarine. Put apple slices on top of the cinnamon sugar mixture.
  3. Beat eggs slightly in a medium bowl with a wire whisk. Mix in flour, milk, and salt, but do not overbeat.
  4. Pour batter over apple slices. Bake 30 to 35 minutes or until puffy and deep golden brown. Immediately loosen the edge of the pancake and turn upside down onto a serving plate.
