This easy no-bake dessert layers angel food cake with a creamy pineapple pudding mixture and fresh berries. Pineapple is one of the world’s favorite tropical fruits. First called “anana”, a Caribbean word for “excellent fruit”, the name “pineapple” came from European explorers who thought the fruit looked like a pinecone with flesh like an apple.

Ingredients

  • 1 package 4 oz Jello vanilla flavor instant pudding and pie filling
  • 1 can 20 oz crushed pineapple with juice
  • 1 cup Cool Whip
  • 1 package 10 ounce prepared round angel food cake
  • seasonal berries

Step-by-Step Instructions

  1. Mix dry pudding mix with pineapple with juice in medium bowl. Gently stir in Cool Whip, let stand 5 minutes. Cut cake horizontally into 3 layers. Place bottom cake layer (cut side up) on serving plate.
  2. Spread 1 1/3 cups of the pudding mixture onto cake layer, cover with middle layer, top with remaining cake layer. Spread remaining pudding mixture over top and sides. Refrigerate at least one hour before serving. Top with your favorite seasonal berries such as strawberries, blueberries, blackberries, or raspberries.

Tips and Techniques

Use a serrated knife to cut the angel food cake into even layers without crushing it. Make sure the cake is completely cooled before assembling.
