Hey, don't know if you remember me from school. I am closer in age to Chad. I saw the article in the kaplan herald today and decided to check it out. I am so glad that i did because my grandma taught me everything i know about cajun cooking, but she left me too soon to teach me everything. There was still a few things that i didn't have a chance to learn before she died. Now after searching through all her old recipe books not having any luck alot of my questions have been answered. Im a northern boy,with a passion for cajun food.Im in school right now for Culinary Arts, and someday hope to open a seafood/cajun restaurant.I have a few cajun connections with my teamates.I play college football, and a large chunk of my teamates are from the great state of Louisiana. Untreated cast iron rusts, especially around water. To prevent metal from oxidizing in the presence of moisture, cast iron requires a process called "seasoning". Seasoning is simply the procedure of baking oil into the oven's pores, and on top of the iron pores. This baked on coating will darken and eventually turn black with age. Darkening is the sign of a well kept oven, and of it's use. This coating forms a barrier between moisture in the air and the surface of the metal. It also provides a non-stick coating on the inside of the oven that is easy to clean. Here are some tips when it comes time to season your oven. Scrub lid and oven in hot water with a mild soap to take off the coating the manufacture puts on the oven before shipping. Use a stiff brush, 3M scrub pad, or plastic scrubbing pad to scrub the waxy coating off of your new Dutch oven, and rinse in clear, hot water. Dry your oven by putting it in the kitchen oven at 150 to 200 degrees for 15 or 20 minute

Not long after returning home from spending Thanksgiving out in the country at daughter's house with family & friends, my husband Robert & I were quite surprised to see Ms Chrissy & her friend at our front door. Chrissy was in for a while after doing her spot on local tv station & came a calling. We had a nice visit, but not long enough, so we invited them over for supper the next night. Chrissy & her friends enjoyed some southern hospitality while feasting on some good old fashinoned gumbo & the fixings. Dalon, Cajun food, much like Cajun accents, varies from Parish to Parish. It also adapts to its surroundings -- for instance, our roux, generally made with oil or butter, is a variation of French reduction made with the more expensive heavy cream. I'm sorry, but as an 8th generation Louisiana French Acadian, I see very, very few authentic recipes here! Shortcuts, canned ingedients such as soups, tomatoes, and cheese and pasta dishes are very new, if they can be called "Cajun" at all. Different cooks had different styles - but this is too far off the mark in a lot of instances. It's unfortunate to put this out there for people who don't know authentic, wonderful, true French Louisiana/Cajun cooking. My French Acadian grandmere's are turning in their graves! Came across this site on KBON website, and that was a good thing- they were killing me with all of the ads for restaurants & food stores- had my stomach GROWLING, & when something that big growls at you, you listen! I just wanted y'all to know you aren't the only Cajuns alive. I am from a little town here in Ks. that was settled by Cajuns from Canada. My greatgrand parents came to Rice Lake, Wisconsin first then on to Ks. My grandparents had a family of ten, of which only one is still alive. At my grandmothers funeral it was attended by 54 grand children and 57 great grandchildren, so you can see we are alive and kicking, us Cajuns here in NorthWest Ks. My great aunt and uncle were Andrew and Eunice Baudoin, they lived on E.8th St in Kaplan. Uncle Andrew ran a small rice mill for many years and they both did upholstery for the area. They had a daughter who lived with them, Lillian who was crippled by Polio. Taunte Une was a fantastic cook and I remember spending many summers shucking corn and cutting it off the cob to make maquesho. My cousin Ted Marceaux helped. I came across your website while looking for a recipe to make boudin. My family and I are transplanted Cajuns from Lafayette, Louisiana living in Grand Junciton, Colorado. It warmed my heart to find your website. It made me a little less homesick. It seems that Cajuns seem to find each other when they are away from the Mother-Land and that has happened here. Last year, on Good Friday, we flew in live crawfish and had a huge boil for all of our friends, Cajun and not. Everyone had a blast. Now our friends, originally from Thibodaux, are returning the favor and hosting their own crawfish boil this year. With only a few days away, our mouths are watering. Just passin' through, thought I'd look around. My mother's side ancestry is Richard/Cooper from Jennings/Elton area. I'm in Nashville, TN now by way of Denver. Interesting to see how many people are dying to be Cajun now. When I was growing up in the 50's and 60's, it wasn't cool to be Cajun and there was no bi-lingual education.
