Jack's Spaghetti and MeatballsJane for her friend Jack LeBlanc
This recipe was given to me many years ago. It has been my childrn's favorite every sense. Editors Note: For a flavor variety on the meatballs use a combination beef and pork meat. As I typed this recipe, I wondered which people preferred - combine the pasta with the sauce or spoon the sauce over the pasta. What your favorite way?

Old Glory Ice Cream (Grand Champion Recipe)Corona Romero for her friend and winner Suzanne Meaux
Grand Champion, Peoples Choice and First Place in the Big Dippers category. Suzanne Meaux won on July 8th the first ever Ice Cream Freeze Off held in Lafayette, LA. This is the first time the state has ever had this competition. They had various entries and the turn out was larger than expected. All proceeds went to the Children’s Museum. I am also attaching her recipe. She named her entry Old Glory and added Blueberries and Raspberries to bring out the red, white and blue. Have convincing from her friends to enter she was glad she did . Huge success.

Chicken and Sausage GumboAshely Smith
As a little girl, I used to sit in my Granny's kitchen in Lafayette and watch her chop the veggies for this fabulous gumbo. It's very filling, and for me, it's the ultimate comfort food. It's made with a lighter roux, and the spice can be adjusted with a little Tony Chachere's

Mimi's Jelly RollDale's Kitchen In Memory of Meredith Begnaud
I loved the days my Mm made jelly rolls. The words "jelly roll' is its own defintion. jellyroll - thin sheet of sponge cake spread with jelly and then rolled up to make a cylindrical cake. In looking at the recipe and I see the ingredient "double acting baking powder". Ever wonder what that meant? Baking powder which lightens or “leavens” many baked goods is “double acting.” Half its reaction is due to moistening the batter and causing the acidic agent to react with the alkaline agent. The other half occurs when the batter reaches a certain temperature.

Persimmon or Diet Persimmon CookiesDale Begnaud in Memory of his Mom, Meredith
Le kaki ou suit un régime le kaki - our recipe title in French. These were some of our favorites growing up - both the fruit and the cookie. The fruit was especially sweet if allowed to almost overripe. But they sure were tart and bitter if you did not wait until the fruit was fully ripened. I can still see them on the my Mom's windowsill ripening. The color of the fruit varies from light yellow-orange to dark orange-red. The size can be as little as a few ounces to more than a pound. Ours were about the size of an orange. The entire fruit is edible except for the seed and calyx.
