Delicious... A very popular dish amoung our older Cajuns who have taught the Cajun younglins to enjoy squash!
Ingredients
4 large or 8 small white squash (small is better)
4 tbsp butter
1 1/2 cup sugar
2 eggs
2 tsp vanilla extract
3/4 cup evaporated milk
1 cup flour
3 tsp baking powder
dash of salt
Directions
Peel squash and cut in pieces. (If using large squash remove as many seeds as possible) Place squash in saucepan with enough water to cover. Boil until tender. (About 10 min.) Drain sqaush and mash with potato masher. Add sugar and butter while still warm. Mix and then add eggs and vanilla, and add the balance of the ingredients. Put in a greased baking dish. Bake at 325 degrees for 30 to 45 minutes or until brown.
