One of the most popular cookie recipes during the Christmas holiday season. The red cherries and coconut are reminiscent of Old Saint Nick's Beard and red suit color.I baked these cookies for my children and now can bake them for the grandkids.
Ingredients
1 cup butter
1 cup sugar
2 tbsp milk
1 tsp vanilla or rum extract
2 1/2 cup flour
3/4 cup red candie cherries finely chopped
1/2 cup finely chopped pecans
3/4 cup flaked coconut
Directions
In a large mixing bowl, cream together the butter and sugar. Blend in the milk and vanilla. Stir in flour, cherries and the pecans.
Mold into two rolls, 2 inches by 8 inches long. Roll in the coconut. Wrap in wax paper and chill overnight.
Prior to baking, slice 1/4 inch thick and place on ungreased cookie sheet.
Bake at 375 degrees for 12 minutes or till the edges are golden. Store in an airtight container.
