These cookies are commonly referred to as Mexican Wedding Cookies; their taste are very similar to the Sand Tart cookie. This cookie made for holidays and weddings can be used to create unique Easter cookies, all the colors of Easter Eggs. See our recipe as to how.
 
Ingredients
1 cup softened butter 1/2 cup powdered sugar
2 cups flour 1/4 tsp salt
1 tsp vanilla 1 cup chopped pecans
powdered sugar for powdering cookies  
 
Directions
In a medium glass bowl using a mixer, cream the softened butter and sugar until creamy. Add the salt and vanilla.

Gradually add the flour and mix well. At this point, you may have to use your hands to manipulate the dough. Combine with the chopped pecans.

Roll into balls about the size of a quarter and place on an ungreased cookie sheet. (You may press down the cookie some or leave as a ball to bake or shape like a sand tart.) Bake 10 to 12 minutes in a 350 degree oven or until light golden brown. Do not overbake. Set aside to cool.

Roll the cookie and coat completely with powdered sugar. Store in an airtight container.

For Easter here is what you can do. Sprinkle a couple of drops of food coloring into your powdered sugar. Mix well and the sugar will assume the color of the food coloring; just like Easter eggs. Roll your cookies in the colored sugar. Your children or grandchildren will love what the Easter Bunny delivered.
