Makes:
Prep Time:25 minutes
Cook Time:40 minutes
Ready In:1 hour, 5 minutes
 
Ingredients
3/4 stick margarine 1 cup celery finely chopped
1 1/2 cup onion finely chopped 1/2 cup green onions
1/2 cup bell pepper chopped 1/2 cup cream of chicken or mushroom
1/4 cup parsly chopped fine 1/4 cup pimiento
2 or 3 cups cooked rice 1/4 cup shredded cheddar cheese
 
Directions
Melt margarine in medium saucepan. Saute for 20 to 25 minutes, the celery, chopped onion, green onion and bell pepper.

Add the cream of chicken or mushroom soup, parsley and pimento. Heat 3 minutes. Add the cooked rice and season to taste. Cook 5 minutes.

Pour into a buttered casserole dish and sprinkle 1/4 cup cheese or arange sliced cheese on top. Bake covered until cheese melts.
