Tuna Fish Pie

One of my favorite memories growing up in my mother's kitchen was smelling this pie bake! It was an easy and quick dish to make and is better the next day after all the seasonings set in. If you have bisquit mix and tuna fish on hand you can whip up this pie easy and ready to eat in about an hour. You can use the cheese of your choice and tuna with our without oil. Its great for church potluck or to take to new mothers.
 
Ingredients
1 onion chopped 2 stalks of celery chopped fine
1 bell pepper chopped fine 1/2 stick butter
2 tbsp flour 2 cups milk
6 slices american cheese or 1 lb block cheese 1 cup shredded your choice cheese on top of dough (if you like alot of cheese use the shredded about 1/2 bag melted.)
1 large can tuna or two small Cajun seasonings to taste
one biscuit dough recipe off Pioneer box *
 
Directions
Saute the onions and celery in the butter. I use the onion mix sometimes because its quick on days when I dont have time to chop and I need to rush. Add 2 Tablespoon flour and blend in the milk. Stir until totally blended and season well with cajun seasonings. Add cheese a slice at a time since there is salt in the cheese you can adjust the taste. Make your bisquit recipe like you do for the biscuits and roll out to make the top. Add shredded mozzarella cheese/chedder or four cheeses on top of dough and bake 375 for about 45 minutes. More cheese can be added if desired once pie is baked and melted 10 minutes more.

Recipe for biscuits
1 cup milk
3 cups bisquit mix
2 teas. butter
Mix milk and biscuit mix and cut in the butter and turn onto floured surface. Knead a few times and roll out to lay on the top of the pie. I add shredded cheese on top then bake. Bake 45 minutes or until dough is baked and cheese is melted.

Sweet Peas and green salad with cucumber and roma tomatoes are great together with this dish. You can end your meal with Chocolate Chip Walnut Brownies with Hot Fudge and Vanilla Ice Cream.
