This recipe is from my best friend Lucille. Great for holiday eating.
Ingredients
3 cups Cooked Fresh Sweet Potatoes
1 stick Oleo
2/3 cup white sugar
1 tsp vanilla
2 eggs beaten
Topping:
2/3 cup brown sugar
1 stick oleo /butter softened
1/2 cup flour
1 cup chopped pecans
Directions
Mix first half of recipe ingredients (potatoes, oleo, sugar, eggs and vanilla) into a greased 9x9x2 casserole dish. Mix together the rest of the ingredients for the topping. Spread evenly on the top of the casserole. Bake at 400 degrees for 40 minutes.
