Another recipe for a delicious yam casserole. Did you know that mostly what we eat are actually yams and not sweet potatoes? The potatoes are both from the same family. |

| Ingredients |
| 3 cups cooked and mashed sweet potatoes |
1/2 tsp salt |
| 1 tsp vanilla |
1/2 stick butter |
| 2 eggs |
1 cup sugar |
| 1/2 cup milk regular or evaporated |
1 cup brown sugar Light or dark |
| 1/2 cup pecans or walnuts chopped |
1/2 stick butter melted |
| 1/3 cup flour |
1 cup marshmallows optional |

| | | Directions | Preheat oven to 350 degrees.
For casserole filling:
Combine together in a large glass bowl the potatoes, salt, vanilla, butter,eggs sugar and milk. Pour evenly into a 13x9 casserole dish.
For the nut topping:
Mix together the brown sugar, nuts, melted butter and flour. Top the potato casserole and bake 350* for 30 minutes.
You can top with marshmallows in the last 5 mintues of cooking. |
