Crawfish Casserole wonderful for a dinner party, family gathering, and wedding rehersal dinner served with a green salad and a fresh french bread.
Editors' Note: This recipe calls for fettuccini noodles; the last rehearsal dinner I went to the chef had used bow-tie pasta.
1 Bag/Box Fettuccini Noodles and Salt, Black Pepper and Cayenne to taste
Directions
Saute' sliced mushrooms in REAL butter on Medium until soft. Add other vegtables. Author's Note: I usually saute' the veggies along with seasoning them for at least 5 to 10 minutes on low heat before adding the half and half. This way the flavor get through and through. Even after I add the milk I may let it simmer for about 5 or so minutes. It helps increase the flavor. Add half 'n half and cheese and simmer until cheese is melted. Add flour enough to thicken. Season to taste.
Boil noodles until soft (add about 1 tablespoon of salt to the water). Drain. Pour noodles into casserole dish. Add crawfish mixture and pour into casserole dish. Stir all ingredients thoroughly until mixture is distributed evenly. Cover top with shredded cheese and bake at 350 for 35-45 minutes until slightly browned. Dont overcook as it wont be as creamy. Green salad made with Romaine lettuce. Tossed with parmesean cheese, croutons and bacon bits. A hot french bread should round out the meal.
