Steen Syurp Dip for Pig Ears or Croquinoles

Ready In:20 minutes
Ken's recipe request asked: "My mother used to make croquinoles and a Steen syrup coating to dip them in. I know she cooked the syurp then let them set. They were gummy but good." Ken also adds - "Very good and better if you add a little crushed pecan on each while still warm".
 
Ingredients
1 cup cane syrup 2 tbsp sweet cream
Batch of Pig Ears or Croquinoles (recipe on website)  
 
Directions
In a medium size pot, bring syrup to a rolling boil. Add the cream and cook to soft ball stage. Soft-Ball stage is reached when the mixture reaches 235° to 240° F on a candy thermomter. At this temperature, sugar syrup dropped into cold water will form a soft, flexible ball. If you remove the ball from water, it will flatten like a pancake after a few moments in your hand. Pour a tablespoon of syrup over each croquinoles or Oreilles de Cochon or dunk them in the syrup like you did as a kid!!!
Very good and better if you add a little crushed pecan on each while still warm.
