When we were kids and Dad being a share cropper, okra was one vegetable that was always plentiful. Being of french decent and mixing our English with French, we use to call okra gumbo.
Ingredients
1 pound okra
salt to taste
black pepper to taste
vinegar to taste
Directions
To steam okra:
In a double boiler, heat water to boiling. Place the whole okra in the top of the double boiler. Cover and let steam for 10 minutes.
Remove and serve. Sprinkle vinegar on the okra along with salt and black pepper to taste.
Steaming okra prevent the slime that some people have an aversion to.
In a medium saucepan, bring water to a boil and pour 1/4 cup vinegar
in the water. Add the okra and boil for 8 to 10 minutes until okra is tender. Drain water. Add salt and black pepper to taste.
