Ready In:45 minutes
Don's (Seafood & Steakhouse), one of the finest and longest lived business in Lafayette, LA. I am told some waitresses working there that this has been their first and only job.
 
Ingredients
Bread Pudding 9 slices white bread
1 1/4 cup sugar 1 can 13 oz evaporated milk
2 cups milk 1 tsp vanilla
4 egg yolks 1/3 cup melted butter
4 egg whites ~~~~~~~~~~~~~~~
Rum Sauce 1 can 8 oz Carnation
1 cup milk 1 cup sugar
1 1/2 tbsp cornstarch 3 tbsp butter
2 ounces rum  
 
Directions
Bread Pudding:
Break bread into small pieces. Add 1 cup of sugar, milks, vanilla, egg yolks, and melted butter in bowl. Mix well; pour into baking pan. Bake in 450 degree oven for 15 minutes. Remove; make meringue (beat egg whites with remaining sugar until stiff); cover pudding with meringue and rebake for 3 to 4 minutes until golden.

Rum Sauce:
In a double boiler put milks, sugar, and butter. When hot, dissolve cornstarch in a little water and add to hot milk. Stir until thick. Remove from fire, then add rum.

Scale this recipe to servings.
