Southern Sweet Potato Pie

One of the more popular classic pies baked for holiday or Christmas dinner or that specail meal is sweet potato pie. Popular in the fall and winter season, the older Cajuns had their stash of sweet potatoes stowed in a dark area of one of their buildings.
 
Ingredients
1 pie shell 9 inch 2 cups mashed cooked sweet potato
3/4 cup sugar 2 tbsp molasses
2 eggs 1 1/2 tsp nutmeg
1 tsp powdered ginger 1/2 tsp cinnamon
1 tbsp orange zest 2 tbsp melted butter
1 1/2 cup milk, cream or evaporated milk  
 
Directions
Preheat oven to 450 degrees.

Line a pie pan with a rolled out pie dough. Prick the dough all over with a fork then press a piece of heavy duty aluminum foil into the pie shell. Bake for 4 minutes until just starting to brown. remove from oven.

Combine the sweet potatoes and sugar in a large bowl. Beat in the molasses and eggs. Add the spices and orange zest and stir well. Stir in the melted butter and milk. Pour into the pie shell.

Bake for 15 minutes, then reduce the heat to 300 degrees and continue baking for 30 to 40 minutes until the filling is firm around the edges but the center remains slightly soft.

Two great tools to prevent your crust from overbrowing. One is to cut a strip of aluminum foil and circle the edge of the crust leaving it on when you bake the pie. The other is a retail product; an aluminum circle that you simply lay over the edge of the pie. Both work nicely. Also if you brush the inside of the crust with egg white, you should not get the unbaked crust at the bottom of your pie.
