Mouth watering hearty potato casserole! |

| Ingredients |
| 3 - 4 pounds new potatoes or small ones |
1 large onion chopped |
| 1 pound bacon |
2 cups Monterey Jack Shredded Cheese |
| 1 cup Miracle Whip |
1/2 cup sugar (optional) |
| 1 pod hot pepper (optional) |
1/4 tsp salt |
| 1 tsp black pepper |

| | | Directions | Boil potatoes in their jackets until done. Drain set aside.
Fry bacon until crispy.
Quarter potatoes and place in bowl, add crumbled bacon, mircle whip, 1 cup cheese, chopped onion, salt & pepper to taste and sugar. Stir ingredients until mixed well.
Spoon into a greased baking dish. Top with remaining cheese.
Place for 15 to 20 min in an oven 400 degrees until hot and bubbly. Do not brown cheese.
Recommended Sides: This goes well with Fried Chicken, pork chops and beans and cornbread.
