Most Cajun farm families raised their own source of meat from meat supply from cattle to chickens to pigs and hogs. A "sow" is a female mother pig, a "boar" is a adult male pig, and a "piglet" is a baby pig. A "herd" is a group of pigs.Despite popular belief, pigs are one of the cleanest animals there are; must be why they are such a popular food item.
 
Ingredients
4 boneless pork chops 1/2 inch thick 1 tbsp Canola or vegetable oil
1 bunch onions chopped 1 cup red and green peppers chopped (Season Blend frozen veggies are good)
2 tbsp or 1/2 package Lipton onion soup mix 2 cups water
season to taste (i.e. salt, pepper, Slap ya Momma! or Tony's, pinch of cayenne)  
 
Directions
Rinse and season to taste the pork meat - Cook Over medium heat in a black pot or heavy aluminum skillet.

Add oil and sauté the chopped onions and bell peppers for approximately 5 minutes. Add the seasoned pork chops and brown.

Add 2 cups water or enough water to cover the meat, and the Lipton onion soup mix; lower heat and simmer for approximately 45 minutes to one hour depending on the thickness desired for the gravy and until meat is tender.

Yep this GOOD! MAKE YOUR TONGUE WANNA SLAP YOUR BRAIN! Serve over rice or potatoes and a vegetable of your choice!
