As a young girl I can remember planting and harvesting (picking)sweet potatoes. The potatoes would produce a sticky white syrup that once mixed with dirt could only be taken off with kerosene. There are as many varieties of sweet potatoes/yams as there are pie recipes for using this wonderful root of the ground. This is one of them and a great holiday pie.
Ingredients
1 pie shell 9 inches unbaked
2 cups mashed sweet potatoes or pumpkin
2 eggs slightly beaten
3/4 cup sugar
1/2 tsp salt
1/2 tsp ginger
1/2 tsp nutmeg
1 tsp vanilla
1 2/3 cup light cream or evaporated milk
1/2 cup butter melted
Directions
Bake the sweet potatoes until tender. Peel and mash. Mix the remaining ingredients (except the pie shell) together with the sweet potatoes. Pour into the pie shell.
Bake at 400 degrees for 50 minutes until a knife inserted one inch from the edge comes out clean.
