One of the many varieties of potatos salad to serve with our Momma's gumbo or Sunday pot roast. |

| Ingredients |
| 3 pounds potaotes (red skinned) |
4 eggs |
| 1 small onion (chopped fine) |
3/4 cup celery (chopped fine) |
| Miracle Whip, Salt and Pepper |

| Directions |
Boil potatoes with skins until potatoes are no longer hard (you can boil the eggs at the same time). Cool potatoes,remove skins and cut into bite size pieces. Salt and Pepper to taste. Dice celery, onion, and eggs and combine with the potatoes.
Starting with a small amount (1/2 cup) of Miracle Whip; mix the Miracle Whip until all potatoes are coated. You can always add more Miracle Whip to taste or for better texture. A dash of cayenne adds additonal flavor to your potatoes salad. |
