General Mills and Pillsbury did not introduce their cake mixes until 1949. The most oft quoted date is 1929 usually mentioning Duncan Hines cake mixes which originally quite lumpy. Now as in other cultures, Cajuns are not too proud to pick up a cake mix at the local grocer. Pineapple is a favorite Cajun flavor and this recipe is the simplest and easiest of all to satisfy the hungry Cajun.
 
Ingredients
1 box pound cake 1 large pineapple can 16oz
 
Directions
Do not drain juice from pineapple can; combine the cake mix and pineapple. Pour in a well oiled pan and bake at 350 for 45 minutes.
