Shrimp and Eggplant Casserole

Makes:
Prep Time:	25 minutes
Cook Time:	1 hour, 15 minutes
Ready In:	1 hour, 40 minutes

Ingredients

2 large eggplants peeled & cubed

1 1/2 pound ground meat

4 cups shrimp peeled and devined

1 large onion chopped

3 beef bouillon cubes

1 small bell pepper

1/2 cup parsly chopped fine

3 slices of toasted bread , crumbed

salt to taste

red pepper to taste

black pepper to taste

4 cups water

Directions

Preheat oven to 325 degrees.

Saute ground meat, eggplant, and onion until brown.

Add and dissolve bouillon cubes and the water. Cook under medium fire for 30 minutes. Remember to stir.

Add shrimp, parsley and bell pepper. Cook for 15 minutes; pour into a casserole dish and add bread crumbs.

Bake in oven for 30 minutes at 325*.
