Seven-Minute Frosting Meringue II

Makes: 1 - 2 layer cake or 1 sheet cake servings
Prep Time:15 minutes
Cook Time:7 minutes
Ready In:22 minutes
This frosting is wonderful for a homemade coconut cake. Just add coconut on top of the frosting when you put it on your cake. Remember this frosting should be prepared when the humidty is not high.
 
Ingredients
2 egg whites, unbeaten 1 1/2 cup sugar
dash of salt 5 tbsp water
1 1/2 tsp light corn syrup 1 tsp vanilla
 
Directions
Combine egg whites, sugar, salt, water and corn syrup in top of double boiler, mixing thoroughly. Place over rapidly boiling water, beat constantly at high speed and cook 7 minutes or until the frosting will stand up in peaks. Remove from double boiler and add vanilla and beat until thick enough to spread. Coconut can now be added.

Scale this recipe to servings.
