This frosting is wonderful for a homemade coconut cake. Just add coconut on top of the frosting when you put it on your cake.
Remember this frosting should be prepared when the humidty is not high. |

| Ingredients |
| 2 egg whites, unbeaten |
1 1/2 cup sugar |
| dash of salt |
5 tbsp water |
| 1 1/2 tsp light corn syrup |
1 tsp vanilla |

| | | Directions | | Combine egg whites, sugar, salt, water and corn syrup in top of double boiler, mixing thoroughly. Place over rapidly boiling water, beat constantly at high speed and cook 7 minutes or until the frosting will stand up in peaks. Remove from double boiler and add vanilla and beat until thick enough to spread. Coconut can now be added. |
