This will frost a 8 or 9" 2 layer cake, 10' tube cake or a 9X13' sheet cake. This frosting does not stand up to humidity well, so use on drier days....One of the more popular universal frosting. |

| Ingredients |
| 3 egg whites |
1 1/2 cup sugar |
| 1/4 cup water |
pinch of salt |
| 1/8 tsp cream of tartar |
2 tsp light corn syrup |
| 2 tsp vanilla |

| | | Directions | In the top part of double boiler, combine egg whites, sugar, water, salt, cream of tartar & corn syrup; beat with a hand held electric mixer until blended well (about 1 minute)
Place over boiling water, beating constantly for 7 minutes or until peaks form when beaters are slowly lifted.
Remove from boiling water; add vanilla & continue beating until frosting is cool & thick enough to spread (about another 7 minutes) |
