Imitation crab meat is a seafood product made by blending processed fish, known as surimi, with various texturizing ingredients, flavorants, and colorants. First invented in the mid-1970s, imitation crab meat has become a popular food in the United States, with annual sales of over $250 million. Surimi is the primary ingredient used to create imitation crab meat. This recipe is a perfect use for the crab meat.
 
Ingredients
1 package imitation crab meat 1 package crawfish tails
1 package or 2 of shredded cheese 1 can cream of mushroom soup or 1 can cream of pepper-jack
2 large eggs  
 
Directions
In a large bowl break up the crab meat. Saute the crawfish tails in a small amount of butter and add to the crab-meat. Add in the half of the shredded cheese (reserve some for topping)and the cream of mushroom or pepper-jack soup and mix well. Grease lightly a casserole dish and pour the mixture into the dish. Sprinkle the rest of the cheese on top of the dish. Break the eggs in a small bowl, mix well and pour the eggs over the mixture. Bake at 350 degrees for 15 minutes or until the cheese has melted.
