This is a seafood casserole with cheese in it and my kids love it and ask for it all the time and so does my boyfriend who is not from South Louisiana
 
Ingredients
1 onion chopped 1 bell pepper chopped
1 stalk celery green onion scallions chopped
1 pound crab meat 1 pound shrimp
1 pound crawfish 2 cups cooked rice
1 can cream of mushroom 1 roll Ritz crackers
1 package cream cheese 1 package shredded cheese
1/2 stick butter (4 tablespoon)  
 
Directions
Melt butter in large skillet or deep pot Magnalite (works well). Add onions, bell peppers, celery, green onions and seafood. Saute until onions are clear then add soup. Add heat for about 2 minutes then add cream cheese. Cook until cream cheese is melted, then pour seafood mixture into deep casserole dish. Add cooked rice then crumble Ritz crackers on top and cover with shredded cheese. Bake in a 350 degree oven for about 20 minutes until cheese on top is melted; let cool for 2 to 3 minutes. Serving this dish is very good on its own but garlic bread would be very good with this dish!
