An authentic Cajun/Zydeco Festival with a Mardi Gras twist show casing Louisiana's finest music, food, arts and crafts and celebrating "La joie de vivre" (Joy of life) Cajun style!!! with a touch of the Ozarks.
 
Ingredients
2 pounds ground chuck 2 onions chopped
1 small bell pepper chopped 4 stalks celery chopped
1 can 16 oz diced tomatoes 3/4 package of 12 oz spaghetti - #3 broken in half and boiled
1 small jar pimento olives sliced 1 cheddar cheese grated 8 oz
2 tbsp oil salt and pepper to taste
1 small can tomato soup  
 
Directions
Brown the meat in a small amount of oil until it loses its redness. Add the tomatoes and vegetables, cooking untill all the liquid is absorbed stirring often. Remove from heat and add the boiled spaghetti and half the cheese. Season to taste. Pour into a greased pyrex dish - top with the rest of the cheese. Bake at 350 degrees for 20 to 30 minutes until bubbling hot.
