Ready In:1 hour, 45 minutes
Good side dish with bar-be-que or pork-loin roast.
 
Ingredients
1 pound ground beef chuck 1 pound Jimmy Dean Sausage
2 pounds chopped onions 1 large chopped bell peppers
4 celery ribs 3 cloves garlc
1 bunch green onions (scallions chopped) 1 1/3 cup raw long grain rice
1 tsp Cajun seasonings 2 fresh peeled tomatoes
1 can 6 oz tomato paste 3 cups Campbell's Consommé Soup

Directions
Brown meat; cook onions, bell pepper, celery, and garlic in a magnalite or iron skillet until other ingredients are soft. Drain any excess oil.
Preheat oven to 350 degrees. Combine mixture with chopped tomatoes, tomato paste, rice, green onion tops and soup. Spray a pyrex size 13x9x2 with Pam or other cooking oil spray. Place mixture into casserole dish,cover and seal with aluminum foil. Bake for one hour.
