Quick and Easy Cajun Shrimp

Don't have too much time and need a quick meal? try shrimp, can tomato, onions, green peppers, tobasco sauce--serve over rice or noodles, BOOM....all done...yummie!!.. This recipe is especially fitting for the diabetic in your family or the Cajun who can not handle lots of spices. It also works great for the Weight Watcher individuals. For you Cajuns who like spicy and hot just throw in your favorite Cajun spices.
 
Ingredients
1 package instant brown rice or regular (2 cups) 1 large onion sliced
1 large green pepper 1 tsp oil
1 can 14 oz diced tomatoes 1 pound cleaned shrimp
handful of scallops (optional) seasonings to taste and tobasco (optional)
 
Directions
While cooking rice as directed on package, slice one large onion and one large green pepper.

Sauté in one tsp of oil until softened.

Add one 14 ounce can of diced tomatoes until heated.

Add one pound of cleaned seasoned shrimp and heat through until shrimp is pink. You can add precooked shrimp instead to save time. Add the seasoned scallops with the shrimp and cook through.

Add seasonings and Tabasco to taste. I add to my taste and let the guests add their own. Some like it spicy hot. Serve over rice or noodles and a salad with tangy dressing.
