One of the treats Cajuns are known for is pralines (praw'lins). Cajuns have to always try to make it's food better and if not better different; it is in our nature. The basic recipe od pralines has been modified time and time again; each one unique and each one just as tasty. Try this unique type of praline.
Ingredients
1 cup buttermilk
1 cup butter
2 1/2 cup sugar
2 1/2 cup roasted peanuts chopped
1/2 tsp baking soda
1 tbsp vanilla extract
2 tbsp peanut butter
Directions
Over low heat combine buttermilk, butter, sugar in a 2-quart saucepan. Cook until the sugar is dissolved. Add peanuts and cook until the soft boil stage or 238 degrees stirring constantly and scrapping the side of the pan. This would take about 10 to 15 minutes but note that the cooking time does vary. (Soft boil stage can be determined by taking a cup of cool water and dropping a small amount of the mixture from a spoon into the water; roll the mixture between your fingers. If the mixture holds a soft ball shape you have reached the soft ball stage). Remove from heat.
Add soda, vanilla, and peanut butter. Stir rapidly until the mixture is creamy and thickened. Drop rapidly from a tablespoon (I always have an extra spoon to scrape the mixture from one spoon to the next) onto lightly buttered waxed paper or parchment paper forming patties. Cool and store in an air-tight container if you have any left :o)!
