From the author..."As most of us are watching how we eat, when it comes to frying I have learned to experiment with different ways to fix our favorite foods. This dish is really good and so much leaner than the old stand by method."

Ingredients
1 to 2 pounds of shrimp, peeled & deveined (24 count) 1 egg
1 tbsp mayonnaise 1 tsp of mustard (or less)
salt black pepper and cayenne to taste tobasco to taste
fish fry (store bought) bread crumbs

Directions
Mix thoroughly the egg, mayonnaise, and mustard.

Add the shrimp, seasoning and tobasco. (Editor's note - You could season the shrimp before adding to the mixture.) Marinate for an hour or so.

Mix equal parts of fish fry and bread crumbs.

Dip the shrimp in the mixture. Place on a cookie sheet covered with foil sprayed with Pam.

Bake at 350 degrees for 12 to 15 minutes.

The author adds, "I make oven baked potato fries or turnip fries with this. Both recipes are on this site. Add a salad and you have a complete meal. And healthy for you."
